Valorization of chicory by-products through eco-extraction of biomolecules of interest

This research project focuses on exploring pathways for the valorization of agri-food by-products, currently considered as waste, to extract their aromatic compounds. The targeted by-products are sourced from the Leroux company, an iconic player in the Hauts-de-France region specialized in chicory root processing. These by-products are a rich source of functional biomolecules, notably antioxidant polyphenols. These polyphenols will serve as a structural backbone for the synthesis of bio-based epoxy resins, aiming to replace conventionally used Bisphenol A (BPA), which is known for its toxicity."
